Receta Michilá. Situated on a beachfront on the small Caribbean island of Carenero in the Bocas del Toro archipelago, Receta Michilá combines local ingredients, landscapes, culture, tradition and history, through dishes that are inspired by the sea, people, family and colors of the Caribbean.
Due to our focus on local produce and supporting local producers, dishes change daily depending on what is in season and available.
The chef. Joseph Archbold (aka Junior), head chef and owner of Receta Michilá and Octo, has gained prominence in the Panamanian culinary world, forging a style of his own that draws on influences from his Afro Antillean and indigenous cultural heritage, techniques and styles of the chefs he trained with in Europe and - most importantly - his mother, Xiomara (Doña Mara - the hotel's namesake). Joseph’s cooking reinterprets dishes and, while constantly evolving, has its roots in Panamanian ingredients and the culinary influences of Bocas del Toro – including Afro Panamanian, European and indigenous.
The kitchen. We are blessed with a talented, young team of chefs in our kitchen. We hope to create an atmosphere where cultural exchange and culinary experimentation thrive. And we hope this is reflected in our dishes.
